Under the D.O. Cava, quality sparkling wines are produced using the traditional method, with a second fermentation in the bottle and a minimum aging of 9 months. The geographical and human peculiarities of each bottle, together with the traditional way of elaborating them, are part of the idiosyncrasy of this product. Protecting them and guaranteeing their seal of quality is the main reason for the designation of origin.
With a commitment to quality and sustainability, the Cava de Guarda Superior category is distinguished by its 100% organic origin and its vineyards over 10 years old. In addition, a new distinctive stamp “integral producer” has been created to identify and give added value to wineries that carry out the entire Cava production process on the same property.
